- 30 ml boisson soja ou lait
- 1 à 2 cs cacao Van Houten le bio sans sucre
- Vanille en poudre
- 1 bol de café fort

- Réhydrater la gélatine dans l’eau froide
- Préparer une tasse de café fort
- Séparer le blanc du jaune d’œuf. Fouetter le jaune d’œuf au batteur électrique avec les sucres. Laisser blanchir. Incorporer le Mascarpone, le skyr et la vanille. Fouetter. Chauffer le lait quelques secondes au micro ondes. Ajouter la gélatine. Fouetter énergiquement, puis l’ajouter à la préparation. Fouetter à nouveau quelques secondes. Monter le blanc d’œuf en neige ferme. L’incorporer délicatement à la préparation à l’aide d’une maryse.


- Dressage :
Tremper rapidement au fur et à mesure les biscuits à la cuillère dans le café. Déposer une première couche de biscuits dans le fond d’un plat (j’ai utilisé un cerclage carré). Ajouter la préparation. Saupoudrer de cacao. Répéter l’opération. Terminer par une couche de la préparation. Mettre au frigo toute la nuit
