- Laisser refroidir
- Démouler
- Pour la mousse
- Porte à ébullition le lait et la vanille
- Battre les jaunes d’œufs avec le sucre
- Ajouter le lait chaud
- Remettre le tout sur le feu jusqu’à épaississement
- Ajouter la gélatine ramollie
- Laisser tiédir
- Ajouter le fromage blanc
- Incorporer la crème monté en chantilly
- Placer le moelleux dans un plat avec un cercle à entremet avec une bande de rhodoïd
- Verser la mousse dans le moule
- Mettre au frais pendant 4h
- Pour le décor
- Faire fondre le chocolat jusqu’à 50 et 55°C
- Faire refroidir le chocolat jusqu’à 29°C
- Refaire fondre le chocolat jusqu’à 33°C
- Etaler le chocolat sur une feuille de rhodoïd à relief
- Attendre qu’il commence à se figer et faire des cercles avec les emporte-pièce
- Laisser durcir totalement avant de détacher les disques
- Enlever les cercles du rhodoïd
- Saupoudrer de sucre glace
- Placer les disques autour du gâteau
- Mettre les perles de sucre et la gousse propre mais utiliser
